Dinner Benedict

I’ve been craving breakfast for dinner lately, so I created this dinner-appropriate dish inspired by Eggs Benedict.

Dinner inspired by Eggs Benedict


Ingredients (2 servings):

  • 4 eggs
  • 2 links of chorizo sausage
  • 1/2 cup cooked spinach
  • 1/4 cup shredded cheese
  • Toast – my favorite is multi-grain sourdough from Trader Joe’s.  You’ll want something that gets super crunchy – english muffins would also work well.
  • 1 packet of bearnaise sauce (you’ll need 1/2 stick of butter and 1/2 cup of milk to make the sauce)


1. Take the chorizo out of the casing and brown it in a frying pan.  Set aside.

2. Make bearnaise sauce.  Let stand.

3. Saute the spinach in a little butter or oil until it is wilted (not cooked to death). Set aside.

3. Toast the bread.  This recipe works better if the toast is crunchy.

4. Fry the eggs in a little butter

5. Layer – toast, spinach, eggs, bearnaise, chorizo, shredded cheese
